Q: Is there an app to use to set the angle.

I agree with both answers, however, if you use an app to determine your stone angle, stay with the app til you're done with that knife, and if you use a digital proteactor, use it for the whole process on that knife. A few degrees of I accuracy won't ruin a sharpening job and you and your knife will never see a difference between 2 or 3 degrees, but don't start with a phone app and finish with a protractor. I like my knives razor sharp so I set the angle to 17 degrees, but if it comes out 15 or 19 it would hardly be noticeable, but I do t want 15 on one side of the blade and 19 on the other .... also, the sharper you get it the shorter it'll last so if you like super razor sharp, it can be done but be ready to re hone often.

If the knife is sharp, then 800 or 1000 should be fine for touch ups. For a really dull knife, start out with a course or medium grit and work up to fine or ultra fine. A 25 degree bevel is a good all around angle for kitchen or hunting knives.

The majority of kitchen knives are sharpened to a 17 to 20-degree angle. Many western knife angles fall into the 20-22 degree category. Asian knives sold in the U.S. usually have a more acute angle and both sides are sharpened to about 15 degrees.

Q: What size are the stones?

6.25x.75x.25”. Roughly the same size as the wet stones. They have a tapered aluminum base for rigidity and positive locking into blade holder and excel in hardened blade materials. Will not cup like stones do over time. Not as cool running as wet stones though.
